I definitely recommend not using light coconut milk...the full fat version will give the sauce a bit of needed extra richness. Easy Thai red curry shrimp recipe prepared with coconut milk. First, I made half the recipe and for 2 people, there was still a ton left over. Good recipe, but does need some adjustment. Add 1/2 the toasted coconut to the curry, stirring to incorporate.
